More about this rule

The rule in plain language

Austin Public Health says state administration began July 1, 2026 and vendors may not operate without the state permit. Austin Fire separately handles units using propane or appliances that produce grease-laden vapors.

What to keep in mind

Apply for the state permit through DSHS. Check Austin Fire requirements before operating; a unit with neither propane nor cooking equipment may not need the fire permit. Site, zoning, right-of-way, sales-tax, and event requirements may also apply to a particular operation.
